Mix together the butter and sugar. Add the eggs, one at a time, beating well. Sift the dry ingredients and add them to the mixture by the tablespoonfuls, alternating with the Coke. And finally, mix in the lemon rind.

Pour dough in a greased cake pan and bake in a pre-heated oven (180 C/350 F/British Gas Mark 4) for 50 minutes.
